Ingredients

  • 1 1/4 pound ground beef, 90% lean
  • 1 cup finely crushed tortilla chips or corn chips
  • 1 envelope onion soup mix (1.2 of a 2 oz pkg)
  • 3/4 cup bottled taco sauce
  • 2 eggs lightly beaten (divided)
  • 1 8.8 oz pouch of cooked spanish style rice - uncle Ben's ready rice
  • 1 15.5 oz can golden hominy, rinsed and drained
  • 1 14.5 oz diced tomatoes with green chiles, drained
  • 1 cup shredded pepper jack cheese (4 oz)
  • 1 medium anaheim pepper, seeded and chopped (1/2 cup)
  • 1/2 cup chopped fresh cilantro
  • Tortilla chips or corn chips, sliced jalpeno pepper and fresh cilantro sprigs

Preparation

Step 1

1. Heat oven 350
2. Combine beef, crushed chips, soup mix, 1/2 cup of the taco sauce, one of the lightly beaten eggs and 1/2 tsp black pepper. Press into bottom and sides of a 10 inch deep dish pie plate.
3.Heat rice according to directions. In a bowl combine the cooked rice, hominy, tomatoes,cheese pepper, cilantro and the remaining taco sauce and 1 beaten egg.
4. Spoon the rice mixture into the meat shell in the pie plate.
5. Cover the plate loosely with foil.
6. Bake for 40 minutes. Remove foil and bake for an added 20 minutes or until an instant read thermometer registers 160. Cool 15 minutes
7. Top with chips, jalapeno peppers and cilantro sprigs.
