Step 1
Punch 5 holes in opposing sides of pie pan. Thread wooden skewers through to form a rack. Wrap steak in a paper towel and place folded side down on rack. Place on lowest shelf in the refrigerator for 4 days. Change paper towel every 24 hours. Remove from refrigerator 30 minutes before cooking. Salt steak on both sides and allow to sit for 30 minutes. Pat steak dry and grill, pan roast or broil.
