  • 4 small peeled tomatoes, chopped {1 lb}
  • 1/2 cup onion, fine chop {2.5oz}
  • 1 jalapeño, fine chop
  • 2 teaspoons olive oil
  • 1 teaspoon vinegar
  • 1 teaspoon lime juice
  • 1/2 teaspoon oregano, crushed
  • 1/2 teaspoon salt

Step 1

In a medium bowl, combine tomatoes, onion and jalapeño. Add olive oil, vinegar, lime juice, oregano and salt. Mix well. Let sauce stand 2 hours to blend flavors. Serve at room temperature. Makes 2 cups.
