Ingredients
- 5 T olive oil
- 2 lbs. thin-cut pork chops
- salt and pepper
- 1 med. onion, diced
- 6 T red wine vinegar
- 1 c white wine
- capers
- 2 T dijon

Preparation
Step 1
1. Heat 2 T olive oil in skillet over med-high heat. Generously season chops. Fry until browned and just cooked through, about 1 minute per side. Set aside.
2. Add remaining 3 T oil over med-high heat. And onions and saute until just beginning to brown. Add vinegar, deglaze pan and cook until reduced by half, 5-6 minutes. Stir in capers, mustard and accumulated juices from chops. Reduce to medium and cook until sauce thickens, about 2 minutes. Check seasoning. Return chops to skillet and heat through.
