  • 4 large potatoes, peeled and cut into ½–¾-inch slices
  • Olive oil
  • 1 recipe Allioli Autèntic
  • Salt

Preparation

Step 1

Preheat the oven to 350°.

Parboil the potatoes in salted water for about 10 minutes; then drain and partially cool.

Place a layer of potatoes, slightly overlapping, in a lightly oiled baking dish; then spread with a thin layer of allioli. Repeat the process, finishing with a layer of potatoes, until potatoes are used up (there should be no more than 4 layers in all), and 1/3-½ cup allioli remains.

Bake for 30–40 minutes or until the potatoes are done.

Spread the remaining allioli on top of the potatoes, and brown lightly under a broiler or salamander. Salt to taste.
