- 2 Tbls. vegetable broth or water
- 6 ounces (about 2 cups) sliced crimini (baby bella) mushrooms
- 1/2 cup chopped red bell pepper
- 2 tsp. Simply Organic All-Purpose Seasoning (or another seasoning blend you like)
- 2 tsp. minced fresh jalapeños (optional)
- 2 1/2 cups (packed) fresh spinach, roughly chopped
- 4 ounces turkey bacon, cooked and chopped
- Sea salt
- Freshly ground black pepper
- 9 egg whites
- 3 green onions, thinly sliced

Preparation
Step 1
You can easily add more or different veggies to this basic baked egg casserole dish. And you can certainly tinker with the spices to suit your taste buds!
This makes a great brunch dish. Serve it alongside a simple salad of arugula, thinly sliced cucumber and a drizzle of balsamic vinegar.
2 tsp. Simply Organic All-Purpose Seasoning (or another seasoning blend you like)
Preheat the oven to 375 degrees. Line a 7-by-11-inch baking dish with parchment.
Heat a large skillet over medium heat. Add 2 tablespoons of vegetable broth or water, the mushrooms, red bell pepper, Simply Organic seasoning, and optional jalapeños. Cook, stirring occasionally, until the vegetables are nearly tender, about 3 minutes.
Add the spinach. Cook until the spinach is cooked down and bright green, about 1 minute. Remove the pan from the heat. Stir in the turkey bacon, and season to taste with salt and pepper.
Spread the spinach mixture evenly on the bottom of the prepared baking dish. Whisk the egg whites, then pour them over the spinach mixture. Scatter the green onions on top.
Bake until the egg whites are set, about 25 minutes. Test by poking a small sharp knife into the middle of the casserole and taking a peek — it should be moist inside, but not liquidy.
Let the casserole sit for about 5 minutes, and then cut into pieces and serve. (The leftovers reheat well in the microwave — just cover and refrigerate.)
Well, it’s hard to find nitrite free bacon in the states. But even when you do, the bacon has added sugar or maple syrup or something along those lines. Can you tell me where to find turkey bacon without added sugars?
That one seems to be impossible just look for a turkey bacon that has very minimal sugar and use it sparingly, Jennie-o makes an uncured turkey bacon.
Applegate makes nitrite free turkey bacon. I buy it at Market Basket in the North East.

Hi Andrea. You have a fruit for breakfast and lunch in both P1 and P3. The app does include that — make sure you are not accidentally on a Phase 2 day.
We browned some ground turkey and added a bit of the alll-purpose seasoning.
I hate to leave a general question in a daily blog post, but get no responses when using the Forum. The page with the FAQ’s – I click everywhere and no questions open. They don’t seem to be hyperlinks and no answers display. Am I missing something? I have to say, I love the FMD but your collateral electronic materials have a lot of errors and do not work well. A business of this scope should really do a better job in this regard. It makes you look unprofessional and amateurish. I see a lot of frustration in the Forums with lack of answers, app problems, etc.

Seems I own a first edition of the FMD book, which I now find out has numerous typos/ errors. Is there a place on your website where those errors are listed (with corrections) so that I can be certain I am really following the program correctly!?! I really want to do this right and have to rely on the book for my information!

I absolutely cannot use heat producing spices like jalapeno peppers, crushed red pepper, etc. in my diet. Will the recipes containing these ingredients work as well for diet purposes if I leave them out? Are there other ingredients I can substitute instead?
You can certainly leave them out. The recipes will work fine. If you like, you can add more of other spices, or herbs like parsley, but it’s not required.
I am on my 3rd month. I am down 18 pounds. trying for 20 ,I found that this works well for me and I enjoy most of the recipes. I have modified some to my likeing and some for the fact of making them phase friendly especially phase 1 and 3. Being prepared is the biggest factor, I found that if I dont have food with me on the road I tend to cheat a little bit. Phase 3 is a problem for me but I found that instead of getting deli meat for snacks I cook steak,pork,chicken and place in serving size baggies and freeze. This works out well and your not scattering on Tuesday night trying to prepare. I also do the same with fruit, esecially pineapple and mango mixed and frozen.
I am confused…i thought the egg was your protein…how can you mix the turkey bacon and the egg? i am very happy if i was wrong all along.
The recipe has already figured that out. It splits your total protein portion between egg white and bacon. Notice that the recipe serves four — your egg white portion would normally be 3 per person, or 12 for the whole recipe. But the recipe reduces the egg whites to 9, then adds the turkey bacon to make the portions work out.
Is there any way to make this if I dont have an oven?
Hm. It specifically a baked casserole. Maybe you could make it i a very shallow skillet and cook slowly with a lid?

Stove top: very heavy skillet or cast iron fry pan, low heat, covered.
For meals on Phase 1 and Phase 2, it’s 3 egg whites. For Phase 2 snacks, it’s 1.5 egg whites. For Phase 3, it’s one whole egg plus up to two additional egg whites (meals and snacks)
Hi Lana. It depends on the recipe you are using. Coconut cream can be used in things like the coconut curry recipe. You can also use it as a healthy fat in smoothies. As for coconut milk, my feeling is that sugar free is more important than preservative-free, if you have to make a choice.
I have been on the diet for 4 days and lost 4 lbs! Can i use truvia in place of stevia?
This casserole was a lifesaver!!! I used Trader Joes’s nitrate free peppered turkey bacon and had a bag of frozen leeks in the freezer which I subbed for the green onions. I defrosted and pan fried (in a dry pan!) until all the liquid was out and they were slightly crisp. They really added another dimension to the dish. I even modified it for Phase 3 by adding 4 whole eggs to 8 egg whites and left out the bacon and added other veggies like artichoke hearts and kale in with the recipe veggies. Top with salsa and avo/guac for your fat. It would even be good stuffed in a sprouted tortilla, breakfast burrito style, in a pinch. (I don’t always have time in the morning to saute and scramble!)
Haylie has said that if you can find turkey jerky with LESS than 1 gram of sugar per serving, you can use it — but be very mindful of how those grams can add up. Even 4 grams per day of added sugar can impact your success. The P2 snack portion for jerky is 2 oz.
We have found a wonderful substitute for wheat flour and related products. Einkorn. Can it be used for the grain portion of this diet?
I’m a picky eater when it comes to fish, eggs and ground turkey, and I don’t like oatmeal (I’ve been eating the strawberry french toast in phase 1). I do not like the flavor of fish, eggs or omeletes so I’ve been adding about 1/4 cup of natural salsa or tomatilla salsa to the fish or omeletes (after the meal is cooked). I realize tomatoes are not part of Phase 2, but is it okay to use the salsa to flavor up these proteins? Or do you have a better suggestion to for Phase 2 dishes?
Hi Julie. Salsa is just fine in Phases 1 and 3, but not on Phase 2. The tomatoes are too high in sugar. You could, however make a different type of salsa. Try chopping cucumbers, lemon or lime, salt/pepper, fresh cilantro or parsley. That’s a salsa you could use on Phase 2.

Hi! Wondering for the diet is natural caffeine allowed? The tea that I drink is an Organic Herbal Chinese Tea. It doesn’t contain added caffeine, only a minor amount of natural caffeine which won’t give you the effects of “caffeine”. Just wondering if it is okay to drink during the 28 days.
I don’t understand why Truvia is allowed on this diet. It contains Erythritol which comes glucose from corn or wheat-doesn’t it?. It also isn’t organic so it more than likely contains GMO’s, too.
Isn’t it frustrating? Applegate is a good brand — it has a small amount of maple sugar, but the net sugars are zero. All the same, that is one reason you should take care how much bacon you consume per day — although the label says “0 grams”, it could be 1/2 gram… and those 1/2 grams can add up. Haylie advises that even 4 grams of sugar can through off your progress. So keep your turkey bacon servings conservative.

Hello! What brand of turkey bacon is recommended? I have been buying Applewood Farms Nitrate-free turkey bacon, but I just noticed that is has less than 2% cane sugar. Ugh. I want to make sure I stick to the FMD plan, so please advise which bacon brand I should be using. Thanks so much! (And, Happy 2014!)

Hormel makes a Preservative free, Nitrate free turkey bacon with no sugar. I find at HyVee and Price Chopper stores in Missouri.
. I’ve been cooking, then cooling the spinach mixture, and dividing it into 4 freezer containers, then I divide the egg whites into each container, and freeze. It cooks up really quickly in the microwave (I let it thaw overnight in the refrigerator), but you can put it in a single serve oven-proof pan and bake it in your oven (or toaster oven!), too.
My current favorite P2 recipe is the Southwestern Breakfast Stir-fry in Haylie’s new Cookbook. No eggs, just ground beef and lots of tasty vegetables, so it freezes very well. I substitute ground turkey for the beef sometimes, and once in a while, I throw in a little turkey bacon. Don’t know where you live, but Trader Joe’s has a nitrate-free turkey bacon that is reasonably priced, and the packages freeze well. I find that if I add a little of the bacon with other protein for a meal, it’s enough to provide the flavor experience without having to use the whole 8 oz. package for only two meals.
