Ingredients
- Icing:
- 2 1/2 cup sifted cake flour
- 1 1/2 cup sugar
- 1 tsp baking soda
- 1 tsp cocoa - I do heaping
- 1 tsp salt
- 1 cup buttermilk
- 1 1/2 cup oil
- 1 tsp vinegar
- 1 tsp vanilla
- 1 1 oz bottle red food coloring
- 2 eggs
- 1 stick butter
- 1 box 10x sugar
- 1 8 oz cream cheese - I use the 1/3 less fat
- 1 tsp vanilla

Preparation
Step 1
Cake:
Sift flour, sugar, salt, baking soda, and cocoa. Add buttermilk, oil, vinegar, eggs, and food coloring. Mix well. Pour into 2 9 inch greased cake pans OR 1 9 x 11 inch cake pan. Bake 350 degrees for 30 minutes....need to watch and cake pan may take longer.
Icing:
Soften butter and cream cheese to room temperature. Cream butter and cream cheese. Add powdered sugar and vanilla, and beat well. Spread on cake. If desired, add chopped pecans on the top.
