Ingredients
- 1 Pound(s) Italian Sausage, Sweet.
- 2 Can(s) (10 Ounce Each) Rotel Diced Tomatoes and Green Chilies, Original.
- 4 Cup(s) Water*
- 4 Teaspoon Beef Base (s)
- 4 Cup(s) Potatoes, Cubed.
- 1 Cup(s) Celery, Chopped.
- 1 Small Onion, Chopped.
- 2 Teaspoon Garlic (s) Minced.
- 2 Cup(s) Corn, Frozen.
- 1/2 Teaspoon Oregano (s)
- 4 Tablespoon Italian Parsley (s) Fresh Chopped, Optional.
- 1 Teaspoon Salt (s)
- 1/2 Teaspoon Black Pepper (s)

Preparation
Step 1
In a large pot; brown the sausage, garlic and onion. Drain off any fat. Add water, beef base, Rotel tomatoes, celery, corn and potatoes. Bring to a boil, cover pan and reduce heat and simmer for about 10 to 20 minutes or until potatoes are done. Stir in parsley and season with salt and pepper to taste. *Can use beef stock in place of the water and beef base if desired.
