Ingredients

  • 2 Pounds Ground Beef, lean
  • 1 Pound Ground Pork
  • 2 Bell Pepper, minced
  • 2 Medium Onion, minced
  • 5 Ribs Celery, minced
  • 10 Cloves Garlic, minced
  • 3 Large Eggs, beaten
  • 6 Tablespoons Butter
  • 1 Cup Bread Crumbs, fresh
  • 1 Teaspoon Nutmeg
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Cayenne
  • 1 Tablespoon Salt
  • 1 Tablespoon Worcestershire Sauce
  • 1/2 Cup Milk
  • 2 Cups Ketchup, divided
  • 2 Tablespoons Honey

Preparation

Step 1

Melt butter in frying pan. When browned, add minced pepper, onion, celery and garlic.

When aromatics are cooked, then add salt, black pepper, worcestershire, cayenne, and nutmeg. Cook until combined.

Add 1/2 cup ketchup, and cook until combined.

Add 1 cup of breadcrumbs and cook until combined. Add more breadcrumbs until a thick paste forms in the pan, approximately another 1/2 cup. Remove from heat and allow to cool.

Preheat oven to 400 degrees F.

When veggies are cool, add to the meat mixture and mix well until combined. Form into a freestanding meatloaf, and place into a roasting pan that will allow drainage.

Mix 3/4 cup ketchup with the honey and spread onto of the meatloaf.

Bake at 400 degrees F for approximately 40 mintues or until done.
