Ingredients
- 1 pound 95% lean ground beef
- 1/2 cup chopped onion
- 1/2 tablespoon minced garlic
- 1 (15-oz.) can low sodium black beans, un-drained
- 1/4 cup chopped cilantro
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 (6-inch) corn tortillas, warmed
- Optional garnishes: tomatoes, lettuce, shredded low fat Cheddar cheese, salsa

Preparation
Step 1
In a large skillet, cook beef, onion and garlic over medium-high heat for 5 minutes or until beef is no longer pink. Place mixture in a colander and rinse under hot water; drain well. Wipe skillet with a paper towel and return beef mixture to skillet over medium-high heat. Stir in beans, cilantro, chili powder, cumin, salt and pepper; cook and stir until heated through, about 5 minutes. Spoon mixture evenly into warmed tortillas; enjoy with optional garnishes.
SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Make sure black beans are gluten free.
