Classic Guinness Beef Stew

Ingredients
- 3 lb boneless beef sirloin
- 2 tbl salt
- 1 tbl pepper
- 1/4 cup butter
- 1/4 cup olive oil
- 3 lbs onions, chopped
- 16 oz Guinness
- 1 1/2 qt beef stock
- 1 1/2 lb carrots
- 3/4 lbs parsnips or turnips cut into 2" pieces
- 3/4 lbs rutabagas
- 1/2 lb celery, chopped
- 1 1/2 lb potato, cut into 1" cubes

Step 1
Season beef with salt and pepper
Heat oil and butter in large pot. Add meat and brown on all sides. Remove from heat and set aside.
Add onions and saute until soft. Stir in browned meat and Guinness.
Pout in enough stock to cover. Place lid on pot and simmer over low heat for one hour or until tender.
Add vegetables and cook for 20 minutes, until vegetables are done and sauce is thick.
Serve hot with a side of cold Guinness.
