  • 1-1/4 C sugar
  • 1 C unbleached flour
  • 1/2 tsp salt
  • 12 egg whites, room temperature
  • 1 tsp cream of tartar
  • 1 tsp vanilla

Step 1

Preheat oven to 350 degrees.

Sift together 1/4 cup sugar, flour and salt, several times, set aside.

In large bowl, beat egg whites until foamy, then sprinkle in cream of tartar and vanilla, beating until stiff but not dry. Beat in remaining cup sugar a little at a time until whites are in stiff, glossy peaks. Carefully fold in flour mixture.

Turn into greased 10-inch tube pan. Bake 45-50 minutes. Cake should be springy to the touch. Cool 3-4 hours, then run knife around edge to loosen, invert onto platter.
