Ingredients

  • 1/2 c. lime juice
  • 1/2 c. finely diced red onion
  • 1/4 c. chopped cilantro
  • 2 minced garlic cloves
  • 1 serrano chili, seeded and very finely chopped
  • 2 tsp. olive oil
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 dried oregano
  • 1 1/2 lb. shelled, deveined uncooked large shrimp

Step 1

Combine all ingredients except shrimp in a medium bowl. Cook shrimp in large pot of boiled salted water until pink, drain. Place in lime juice mixture; stir to coat. Refrigerate 1 1/2 hrs to no more than 2 hrs., stirring frequently. Drain and serve with avocado dip and corn chips.
