Ingredients

  • coarse salt and pepper
  • 2 1/2 lbs. of fresh spinich
  • 2 T. butter
  • 1/2 med. onion, minced
  • 4 garlic cloves, minced
  • 4 ozs. cream cheese cut into cubes
  • 1/2 c. milk
  • pinch of ground nutmeg

Preparation

Step 1

Bring salted water to a boil. Add spinich and cook just until wilted about 1 min. Drain in a colander, rinse with cold water and cool. Squeeze spinach to remove excess water, coarsly chop. In a large saucepan, heat butter over medium. Add onion and garlic. Season with salt and pepper. Cook stirring occasionally, until onion softens, 3-5 mins. Add cream cheese and milk, cook stirring until smooth and melted. Stir in spinach, simmer over med. heat until mixture thickens, 8-10 mins. Add nutmeg, season with more salt and pepper if desired.
