Ingredients
- 1 c. sugar
- 3 T. water
- 2 large egg whites at room temperature
- Pinch of cream of tartar
- Pinch of salt

Preparation
Step 1
In a small saucepan, combine the sugar with the water and bring to a boil over med. high heat stirring constantly until the sugar has dissolved, 2-3 mins. In a large bowl of a standing mixer, beat the egg whites with the pinches of tartar and salt until soft peaks form. With the mixer a medium, carefully pour the hot sugar syrup into the eggs whies. Continue beating the frosting until cool and billowy, about 5 mins. Immediately spread the frosting on the cupcakes.
