- 1 Basic butter cookie recipe
- 7 oz. bag sweeted flaked coconut
- 12 oz. white chocolate

Step 1
Make the basic butter cookies but form the dough into 20 teaspoon sized balls. Spread the coconut on a plate. Roll each ball in the coconut, pressing so it adheres. Place on prepared baking sheets. Bake for 10-12 mins. Cool on baking sheets for 5 minutes and transfer to cooling racks. Meanwhile, in a heat proof bowl placed over, but not touching, simmering water, melt the white chocolate-chopped or morsels. Turn half the cookies upside down and spread the flat sides with the chocolate and sandwich with the remaining cookies.
