Skillet Chicken 'n' Noodles

Ingredients
- 2 teaspoons vegetable oil
- 1 pound boneless, skinless chicken breast halves, cut into 1/2-inch strips (about 3 chicken breast halves)
- 2 cups fresh broccoli florets
- 1 3/4 cups water
- 1 (4-1/2-ounce) jar mushrooms, drained
- 3 tablespoons soy sauce
- 2 (3-ounce) packages ramen chicken noodle soup mix

Preparation
Step 1
Heat oil in large nonstick skillet over medium-high heat until hot. Add chicken strips, and cook 5 minutes or until done, stirring often.
Add broccoli and next 3 ingredients. Stir in 1 flavor packet from soup mix. (Reserve remaining flavor packet for another use.) Bring broccoli mixture to a boil. Break noodles from both packages of soup mix in half, and add to skillet. Cover, reduce heat, and simmer 5 to 7 minutes or until broccoli and noodles are tender, stirring occasionally.
