Cheesecake Berry Parfait

Ingredients

• 1 c. blueberries
• 1 c. raspberries
• 1 c. blackberries
• 1/2 c. sugar to macerate berries
• 8 oz. marscapone, neufchatel or low fat cream cheese
• 8 oz. whipped topping
• 1/3 c. powdered sugar
• 1 tsp. vanilla
• 1 lime juiced

Preparation

Step 1

Combine fruit and sugar and set aside in the fridge to macerate. Bring cheese to room tempterature and whip together with the rest of the ingredients. Place a dollop of cream in parfait glass and top with a large spoonfull of berries. Repeat twice for 3 layers.
