- 3 large Eggs
- 3 Lemons ; rind and juice only
- 8 ounces Castor sugar

Preparation
Step 1
Peel lemons very thinly, avoiding the pith, then squeeze out all the juice.
Put in a mixing bowl and add the eggs and sugar. Melt the butter and dribble into the mixture. Microwave approximately 4 minutes on high, pausing halfway through to stir. The mixture is cooked when it coats the back of a spoon. Allow to cool slightly before pouring into warm Mason jars.
