Ingredients

  • 1 cup sugar
  • 3.4 cup cider vinegar
  • 1/2 cup water
  • 1/2 tea. salt
  • 1/2 tea. mustard seeds
  • 1/2 tea. cinnamon
  • 1/2 tea. allspice
  • 1/4 tea. ground cloves
  • 1/4 tea. ground nutmeg
  • 1 lb. rhubarb, cut into 1" pieces (to measure 4 cups)
  • 1 large onion, chopped
  • 1 cup dried cranberries
  • 1/2 cup golden or dark seedless raisins

Step 1

Wash 4 half-pint or 2 pint jars. Keep hot until needed.

In a 4 qt. non-aluminum pan, combine sugar, vinegar, water, salt, mustard, cinnamon, allspice, cloves and nutmeg. Heat to boiling, reduce heat and simmer for 5 minutes,m stirring occasionally.

Add rhubarb and onion to sugar mixture, then cover and simmer relish over medium low heat for 35 minutes, stirring occasionally. Add cranberries and raisins and continue simmering, partially covered, for about 20 minutes, or until the mixture is thick.

Ladle into hot jars. Process in boiling water bath 10 minutes for half-pints, 15 minutes for pints.
