Gluten Free Banana Muffins with Nutella Swirl

Ingredients
- 1 3/4 1 3/4 3/4 cup (245 g) all purpose gluten free flour (I used Better Batter)
- 3/4 3/4 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 1/4 1/4 1/4 cup (36 g) cornstarch
- 1 1 1 teaspoon baking powder
- 1/2 1/2 1/2 teaspoon baking soda
- 3/4 3/4 3/4 teaspoon kosher salt
- 2/3 2/3 2/3 cup (133 g) sugar
- 6 6 6 tablespoons (84 g) unsalted butter, at room temperature
- 2 2 2 eggs (120 g, out of shell) at room temperature, beaten
- 1 1 1 teaspoon pure vanilla extract
- 2/3 2/3 1/3 2/3 (5 1/3 fluid ounces) buttermilk (or 2/3 cup (150 g) sour cream), at room temperature
- 1 1/2 1 1/2 3 cups (300 g) mashed ripe bananas (about 3 medium bananas)
- 1/2 1/2 1/2 cup (148 g) Nutella hazelnut spread

Preparation
Step 1
Preheat your oven to 350°F. Grease or line two standard 12-cup muffin tins (or 2 24-cup mini muffin tins), and set them aside.
In a large bowl, place the flour, xanthan gum, cornstarch, baking powder, baking soda, salt and sugar, and whisk to combine well. Create a well in the center of the dry ingredients, and add the butter, eggs, vanilla, buttermilk (or sour cream) and mashed bananas, mixing to combine after each addition. The batter should be thick (thicker if you used sour cream), but fluffy. Fill the prepared muffin cups nearly full (a bit more than 3/4 of the way full), and add a dollop of Nutella (about 1/2 teaspoon for the full-sized muffins and about 1/3 teaspoon for the mini muffins) to the top of each. With a toothpick, swirl the Nutella into the batter in each cup.
Place the muffin tins, one at a time, into the center of the preheated oven and bake until a toothpick inserted in the center of a muffin comes out clean (about 18 minutes for the full-sized muffins and about 10 minutes for the mini muffins). Remove from the oven and allow to cool in the muffin pan for 5 minutes before transferring to a wire rack to cool completely.
