Ingredients

  • 2 c. all bran cereal
  • 1 1/2 c. shredded carrot
  • 1 c. milk
  • 3/4 c. drained canned crushed pineapple
  • 1/2 c. plain yogurt (Not fat free)
  • 1 1/2 c. whole wheat flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 c. honey

Step 1

Oven 375 F.

Line 13 x 9 metal baking pan with foil, leaving 2 inch overhang on each end. Lightly butter or Pam foil.

In bowl, combine bran, carrot, milk, pineapple and yogurt, let stand for 5 minutes.

In large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk egg and honey into milk mixture. Pour over dry ingredients and stir just until moistened.

Spread into prepared pan, smoothing top. Bake for about 30 minutes or until a tester inserted in center comes out clean. Let cool completely in pan on rack. Using foil overhang as handles, remove from pan and cut into 16 bars.
