Salmon & prawn toast 1 Picture

Ingredients

  • 100 g smoked salmon
  • 100 g peeled prawns
  • 1 small bundle of fresh dill
  • 2 onions
  • 3 hard boiled eggs
  • 2 tbsp Dijon mustard
  • scant 1/4 tsp grated nutmeg
  • 150 ml mayonnaise
  • 2-3 tbsp chilli sauce
  • ca 50 ml crème fraiche
  • salt
  • ground white pepper
  • 4 slices good white bread
  • butter for frying
  • 4 tbsp red caviar
  • 4 fresh dill tops, for serving
  • 1 lemon, cut in wedges

Preparation

Step 1

Finely chop salmon, prawns, onion, dill and eggs and mix together in a bowl.

In another bowl, mix together mustard, nutmeg, mayonnaise and chilli sauce.

Fold in the mayonnaise mixture into the salmon mixture a little at the time. Mix in the crème fraiche, salt and white pepper to taste.

Fry the bread in a little butter.

Divide the salmon mixture onto the warm toast. Decorate with a tablespoon of red caviar, serve with a dill top and lemon wedge.
