  • 1 cup cubed ham or bacon
  • 1/4 cup chopped onion
  • 4 tablespoons melted butter
  • 12 eggs, beaten
  • 4 oz mushrooms
  • 1 cheddar cheese sauce recipe (Crick's Recipes)
  • 3/4 cup bread crumbs

Step 1

Saute ham and onion in 3 tablespoons butter. In large skillet add eggs. Cook until mixture begins to set. Draw spatula across to form large curds. Continue until eggs are thick but still moist. Gently add mushrooms and cheese sauce. Spoon ito greased 9 X 12 dish. Combine bread crumbs and 1 tablespoon butter. Stir well. Spread over eggs. Cover and refrigerate overnight. Remove and let stand for 30 minutes. Bake at 350 degrees F for 30 minutes.
