Ingredients

  • Makes 4 small cakes
  • 4 ounces semi-sweet chocolate
  • ½ cup butter
  • 1 Tbsp cabernet (or use 1 tsp almond extract)
  • 1 tsp vanilla
  • 1 cup powdered sugar
  • 2 eggs
  • 1 egg yolk
  • 6 Tbsps flour
  • ¼ tsp cinnamon and ginger each

Butter four 6-ounce custard cups or small ramekins. Place on baking sheet. Microwave chocolate and butter until butter is melted. Whisk until chocolate melts. Stir in wine or extract, vanilla and sugar until blended. Whisk in eggs, and the stir in remaining ingredients. Spoon evenly into prepared dishes. Bake in 425 degree oven for 15 minutes until sides are firm and centers are soft. Let stand 1 minute, and then loosen edges with knife. Invert onto serving plates and sprinkle with more powdered sugar.
