Ingredients
- Bottom Layer:
- ½ cup butter
- ¼ cup sugar
- 1 ¼ cup all-purpose flour
- Middle Layer:
- 2 eggs
- 1 cup brown sugar, packed
- 1 cup crushed pineapple, drained
- (save juice for icing)
- ½ teaspoon almond extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons all-purpose flour
- ½ cup chopped walnuts
- Top Layer (Icing):
- 1 ½ cup icing (confectioner’s) sugar
- 3 tablespoons butter
- 5 teaspoons pineapple juice

Preparation
Step 1
Bottom Layer: Combine butter, sugar and flour in bowl. Crumble together well. Pack in 9 x 9 inch (22 x 22 cm) ungreased pan. Bake in 350⁰F oven for 15 minutes.
Middle Layer: Beat eggs slightly. Add remaining ingredients. Stir to mix. Spread over shortbread base. Bake in 350⁰F (180⁰C) oven for 30 minutes or until set and a rich brown color. Cut into 36 squares.
Top Layer (Icing): Beat all together in bowl adding more juice a few drops at a time to reach proper spreading consistency. Spread over bars.
