Ingredients
- 1 pound bittersweet chocolate
- 1 cup heavy cream
- 1 tsp mint extract
- Cocoa for dusting

Step 1
Break up the chocolate into small pieces about 1/4 to 1/2 inch in size.
Put the cream on the stove to boil. As soon as it comes to a boil, quickly pour it over the chocolate. Let it sit for 60 seconds. Add the mint extract.
Slowly stir in the center of the bowl. Eventually the melted chocolate and cream will come together.
Put some plastic wrap on it and chill it for at least an hour. And when it comes out it will be nice and firm and easy to work with.
Form the ganache into balls. Throw them into the cocoa and roll them around.
