  • 1 cup grated aged Cheddar
  • 2 tbsp unsalted butter, at room temperature
  • 1/3 cup flour
  • 1/2 tsp paprika
  • 2 to 3 tbsp water
  • 18 pimento-stuffed green olives, drained

Step 1

Preheat oven to 400F.

Combine cheese with butter in a medium bowl. Stir in flour and paprika. Add water, a tbsp at a time, until dough comes together. Scoop out 2 tsp portions of dough. Flatten each portion into a disk and warp around an olive, pinching to seal completely. Repeat with remaining dough and olives. Arrange olive balls on a baking sheet.

Bake in centre of oven until pastry is golden, about 15 minutes. Serve warm.

Make-ahead tip: Olive balls can be made ahead and refrigerated up to a day before baking. Remove from refrigerator at least 30 minutes before baking.
