  • 3/4 cup nut pieces
  • 2 cups sugar
  • 1 cup cream or evaporated milk
  • 3/4 cup light corn syrup
  • 1/2 cup (1 stick) butter or margarine
  • 1 cup cream or evaporated milk
  • 1 teaspoon vanilla extract

Step 1

Sprinkle the nuts over the bottom of a buttered 8x8-inch pan. Bring the sugar, 1 cup cream, corn syrup and butter slowly to a boil in a saucepan, stirring occasionally. Stir in 1 cup cream.
Cook until the mixture begins to thicken, stirring frequently. Continue cooking until the mixture darkens, stirring constantly. Continue cooking to 254 degrees on a candy thermometer, hard-ball stage. Remove from heat.
Stir in the vanilla. Pour the hot mixture over the nuts. Let stand until firm. Cut into small squares.
