Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 large lemon (+ rind grated)
- 1/4 tsp salt
- 3/4 cup sour cream
- 1 tsp baking soda
- 2 cups flour

Preparation
Step 1
Preheat oven to 350F. Lightly grease 9" square cake pan. Set aside.
Combine butter and sugar in a large mixing bowl, beating with an electric mixer until creamy. Beat in eggs, one at a time, until smooth. Grate the rind and squeeze the lemon juice. Stir into butter mixture, along with the salt (lemon and rind can be left out, if desired).
Combine sour cream and baking soda in a small bowl. Gradually beat into butter mixture, alternating with the flour. Turn batter into prepared pan and smooth the top. Bake in centre ov oven for 45 to 50 minutes or until cake is golden and a cake tester inserted in the centre comes out clean. Cool in pan on a rack.
