Ingredients
- Italian Seasoning (any brand)
- 4 chicken breasts, boneless, skinless
- 1 tbs olive oil
- 1/4 c chopped shallots
- 1 cup Stancatos Marsala Sauce
- 1 cup homemade or canned chicken broth
- 2 1/2 cups sliced mushrooms
- 1/2 cup sun-dried tomatoes, julienned
- 1/2 cup sliced green onions
- 1 cup butter, cut into small pieces

Preparation
Step 1
Season chicken breasts. Set aside.
In a saucepan, heat 1 tbs olive oil. Add shallots and sauté until tender. Marsala Reduction: Add Marsala sauce and chicken broth and stir to scrape up any brown bits from the bottom of the pan. Bring to a simmer and cook until reduced by half. Set aside.
Grill chicken (I just used a Panini maker). While the chicken is cooking, preheat a sauté pan. Add the Marsala reduction, mushrooms, tomatoes and green onions. Bring to a simmer and reduce by half. Remove from heat. Add the pieces of butter in, piece by piece. Stirring constantly, until the sauce is slightly thickened. Put chicken breasts back in sauté pan and heat through.
