Ingredients

  • 2 Bags Boil-in-Bag White Rice
  • 2 cans Cream of Chicken soup
  • 1 small container of sour cream
  • 2 large chicken breasts shredded
  • 1 1/2 tubes of Ritz crackers - coarsely crumbled
  • 1 stick butter - melted FOR TOPPING!

Step 1

Preheat oven to 375 degrees

Boil chicken breasts and shred meat. Set aside
Boil rice.
Mix Cream of Chicken Soup with 1 small container of sour cream, cooked rice and shredded chicken breasts. Pour mixture into greased 9"x13" casserole.

Top with coarsely crumbled Ritz crackers mixed with 1 melted stick of butter or margarine.

Bake for 30 minutes until crackers are crunchy and mixture is bubbly.

(You might try adding water chestnuts and maybe some frozen green peas for color and as a deviation from the original recipe)
