  • For aioli:
  • 1 egg (at room temperature)
  • 1 cup oil
  • some water
  • Salt to taste
  • 3-4 cloves of garlic, peeled, minced, and turned into paste
  • For lemon aioli:
  • add a few drops of fresh lemon juice.

Step 1

Bring eggs to room temperature (very important or it will not work). The ratio to create mayonnaise is always 1 egg to 1 cup of oil. If you want more mayonnaise, increase the egg and oil by the same.

Whisk egg in a bowl. Slowly add oil to the egg - whisking as you go. After finishing the oil, slowly add some water, 1 tbsp. at a time and whisk. Just add only a few tablespoons until the color looks like mayonnaise color.

To create aoli, just add garlic paste to the mayonnaise and mix well.
