This was very good for both but I'd like a bit more acidity - try squeezing some lemon over it, or grating over some zest or both, before serving.

Ingredients

  • 3/4 cup cannellini, rinsed and drained
  • 1/4 cup sun-dried tomato vinaigrette
  • 3 tablespoons sliced red onion
  • 2 tablespoons sliced sun-dried tomatoes
  • 2 teaspoons minced garlic
  • 2 - 3 tablespoons fresh basil chiffonade
  • 10 - 12 shrimp, cooked and cooled - for Dan
  • 1 can tuna in olive oil, drained - for me
  • mixed lettuce - to serve

Preparation

Step 1

* Combine everything except seafood and refrigerate until serving time (a day or two before is fine).

* Line plates with a bit of lettuce, top with bean salad and shrimp for Dan and tuna for me. Sprinkle with some salt and pepper and grated lemon zest or lemon wedges on the side.
