Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon cayenne
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup vegetable oil

Preparation

Step 1

Coat muffin tins with non-stick spray.

Preheat oven to 400 degrees.

Stir dry ingredients (flour, sugar, baking powder, salt and cayenne) and cheese together in bowl #1.

Make a “well” in center of dry ingredients.

Stir liquid ingredients (egg, milk and vegetable oil) together in bowl #2.

Pour liquid ingredients into “well.”

Stir just to combine. (Batter will be slightly lumpy.)

Fill muffin tins 2/3 full.

I sprinkled a little course salt over the top of each muffin.

Bake 17-20 minutes or until golden.

Makes 12 muffins.
