Ingredients

  • old bread, cubed
  • 2 eggs
  • 1 onion, chopped finely
  • mushrooms, chopped small
  • zucchini, chopped small
  • chives or scallions
  • some water
  • 1 tbsp. olive oil
  • salt and pepper

Preparation

Step 1

Get a bowl and place the cubed bread in bowl. Add a few drops of water to reconstitute the bread - mix well. Don't make the bread soggy by adding too much water.

Chop up onions, mushrooms, zucchini, and chives. You may add other ingredients such as carrots, peppers, whatever is left over in your fridge.

Add above ingredients to the bowl and add eggs. Mix it all together.

Heat olive oil in pan. Scoop about 3 tablespoons in a mixture and form a small pancake. Fry until golden brown.
