Grilled Romaine Salad with Balsamic Vinaigrette

Ingredients
- 1 heart of Romaine lettuce
- 1 Tbs balsamic vinegar
- 1 Tbs olive oil
- 1/4 cup parmesan cheese

Preparation
Step 1
Trim the bottom off of the lettuce but leave core intact. Cut the lettuce in half length-wise. Rinse lettuce inside and out; drain cut side down on paper towels.
Brush the cut side with olive oil, sprinkle with salt and pepper.
Heat your grill and place lettuce cut side down on grill. Grill for 1-2 minutes. Check for lightly brown inside. Remove from grill. Sprinkle with parmesan cheese and drizzle with dressing.
Dressing: Whisk balsamic vinegar with olive oil. Add a pinch of freshly ground black pepper.
1 head of romaine lettuce equals 2 servings.
