Ingredients

  • 1 pound of rib-eye steaks
  • 1 pound mixed spring greens
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 jalapeno, chopped
  • 3 tablespoons cilantro, chopped
  • 1 lime- squeezed for fresh juice
  • 1/2 teaspoon
  • 1/2 teaspoon pepper
  • 1 15 ounce can black beans
  • 1 1/2 cups frozen corn, thawed
  • 1 cup sour cream
  • 30 tortilla chips
  • 1 avocado, sliced
  • 1 cup cheddar cheese, grated

Preparation

Step 1

1. Season steaks on both sides with salt and pepper. Cook in a pre-heated iron skillet for about 4 minutes per side. Let steak rest for five minutes and then cut into strips.

2. Combine jalapeno, onions, tomatoes, lime juice, cilantro, salt, and pepper in a medium sized bowl.

3. Chop lettuce and combine with beans and corn.

4. Plate the salad first with the lettuce, bean, and corn mixture. Next, layer on the salsa. Top with steak, cut avocado, cheddar cheese, tortilla chips, and sour cream.
