Ingredients
- Marinade:
- 6 cloves garlic
- 3 whole jalapeno peppers, finely chopped (don't seed)
- 1/3 cup olive oil
- 3 tablespoons dijon-style mustard
- 1 teaspoon kosher salt
- 1 1/2 pounds beef flank steak or sirloin steak
- Sandwich
- 12 slices Texas toast, toasted
- 1/2 cup mayonnaise w/1 tsp chili powder
- 1 whole red onion
- 4 ounces queso fresco or farmer cheese, crumbled
- fresh cilantro sprigs
- lime wedges

Step 1
For marinade, in a bowl whisk together garlic, jalapeno peppers, olive oil, lime juice, mustard and salt.
Trim fat from meat. With a sharp knife score meat on both sides at 1 inch intervals in diamod pattern. Place meat in a self-sealing plastic bag set in a shallow dish. Pour marinade over meat, seal bag. Marinade in refrigerator for 4 to 24 hours.
