Basil Avocado Sauce

Ingredients
- This is another Blendtec “Recipe of the Week” that I modified slightly. Nutritional yeast is high in protein and is often used as a cheese substitute. Great over pasta.
- 2 tbsp. water
- 2 tbsp. extra virgin olive oil
- Juice from 1/2 large lemon
- 1 clove garlic
- 1 medium ripe avocado, peeled and pitted
- 1/2 cup fresh basil
- 2 tsp. nutritional yeast or 2 tbsp. grated fresh Parmigiano-Reggiano cheese
- Salt and pepper to taste

Preparation
Step 1
Place all ingredients into blender and run on medium for 20 – 30 seconds (“Sauces/Dips/Dressings/Batters” button with a Blendtec). Use a spatula and/or tamper to help get ingredients into blades, if necessary.
