  • 1 1/3 cups all-purpose flour (about 6 oz)
  • 1 1/2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of ground red pepper
  • 2 tablespoons chilled butter, cut into small pieces
  • 1/3 cup plus 1 tablespoons low-fat buttermilk, divided
  • 3 tablespoons grated fresh Parmesan cheese
  • Cooking spray

Step 1

Preheat oven to 400 degrees.

Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and next 5 ingredients (through red pepper) in a bowl, cut in butter with a pastry blender or 2 knives until mix resembles coarse meal. Add 1/3 cup buttermilk and cheese, stir until just moist.

Turn dough out onto a heavily floured surface, knead lightly 5 times. Roll dough to 1/2 inch thick. Cut with 2 1/2 inch biscuit cutter. Place biscuits on a baking sheet coated with cooking spray. Brush with remaining 1 tablespoon buttermilk. Bake 400 degrees for 15 minutes until golden brown.
