Ingredients

  • 1 c. unsalted butter
  • 8 oz. pkg. cream cheese
  • 2 3/4 c. sugar
  • 1 tsp. kosher salt
  • 4 tsp. pure vanilla
  • 2 1/2 +2 tbls. reg. flour

Preparation

Step 1

Let eggs stand until room temp.
generously butter and lightly flour two 8x4x2 in. loaf pans OR one 10 in. pan.
Beat cold butter about 2 min. on low speed.
Add cream cheese beat for 3 min. on low speed.
While mixing, add sugar in slow continuous stream.
Add salt. Continue mixing 5 min., scrape sides and bottom. Mix another two min.
Add eggs. Beat in vanilla
Gradually add about 2 1/2 c. flour on low speed.
Fold in remaining flour by hand or spatula.
Turn batter into prepared pans. Run spatula in zigzag pattern through batter. Drop filled pans to dislodge air bubbles.
Place on center rack of cold oven. Turn oven to 300 degrees.
Bake 1 hr and 15 min.
Test for doneness.
