Ingredients

  • 9 slices white bread
  • 13 oz evaporated milk
  • 1 tsp vanilla
  • 1/3 C melted butter
  • 1 1/4 C sugar
  • 2 C milk
  • 4 egg yolks
  • 4 egg whites

Preparation

Step 1

Break bread into small pieces. Place in mixing bowl with 1 C sugar, evaporated milk, 2 C milk, vanilla, egg yolks and melted butter. Mix well. Pour into a 10 x 8 x 2 baking pan. Bake in preheated oven at 325 for 45 minutes. Remove and prepare meringue.

Beat egg whites with 1/4 C sugar until stiff. Cover pudding with meringue and bake for 3-4 minutes or until meringue is golden.

May be served with rum sauce.
