Grilled Balsamic Salmon on a Bun

Ingredients
- 1 lb Wild Pacific Salmon fillets, thawed
- 3 tbsp maple syrup
- 3 tbsp balsamic vinegar
- 1 tbsp finely chopped fresh rosemary
- 1/2 tsp each salt and pepper
- 1 tbsp water
- 3 peeled garlic cloves
- 1/3 /cup mayonnaise
- 4 crusty rolls
- 3 Arugula leave or lettuce

Step 1
Thaw salmon fillets according to package instructions. Preheat grill to medium-high. Combine syrup, vinegar, rosemary, salt and pepper. Place garlic cloves in centre of a piece of heavy-duty aluminum foil and drizzle with 1 tbsp each of maple mixture and water. Fold foil around garlic to seal tightly. Place on the coolest part of the grill and cook, turning often, for 20 minutes. Cool. Remove garlic from foil and mash along with any juices to make a paste. Blend 1 tsp of the maple mixture and mashed garlic into the mayonnaise. Grill fillets, turning once, for 5 minutes or until cooked. Spread mayonnaise mixture on rolls; top with some arugula or lettuce and a piece of salmon.
