Chocolate Eclair Puffs

Ingredients
- 1/4 C butter
- 1/2 C water
- 1/2 C flour
- 2 eggs, rm temp
- 1 1/2 C heavy cream

Step 1
Preheat oven to 375. Boil butter and water together. Remove from heat and add flour all at once, beating rapidly til dough forms a ball. Cool 5 mins. Add eggs, one at a time, beating hard til dough is smooth. Butter and flour cookie sheet and drop dough by small tspfuls 2" apart and bake 15 mins til brown and puffed. Slit each puff, turn off oven. Put back in oven for 10 mins more. Cool. Whip cream w/ a little sugar and van. to taste. Cut off tops of puffs, fill w/ whipped cream; replace tops and spoon choco over. Choco sauce: Over lo flame, heat 3 oz semi-sweet choco and 2 T butter, stirring sauce-will thicken as it cools, so work quickly as you frost puffs. Refrig puffs til ready to serve.
