  • 2 cloves garlic see savings
  • 1 15-ounce can no-salt-added black beans, rinsed and drained see savings

  • 2 teaspoons lemon juice see savings
  • 8 6-inch corn tortillas see savings
  • 1 cup shredded reduced-fat cheddar or Monterey Jack cheese (4 oz.) see savings

Step 1

Heat oil in a large nonstick skillet over medium-high heat. Add frozen peppers and garlic. Cook, stirring occasionally, for 10 minutes or until peppers are tender and most of the liquid has evaporated. Stir in beans and salt; heat through. Remove from heat and stir in lemon juice.

Lay tortillas flat and divide pepper mixture among tortillas. Top each with cheese and serve.
