Ingredients
- 2 1/2 oz bittersweet chocolate
- 1/3 cup dried sour cherries ( or cranberries)
- 1 1/3 cups flour
- Appropriate baking powder/ soda (won't use self rising flour)
- 1/3 cup cocoa powder
- 3/4 cup light brown sugar
- 1 cup oil
- 3 eggs
- Pinch salt
- 3 oz cooked peeled beets

Step 1
Melt chocolate & cool slightly. Rough chop cherries/cranberries. Sift flour b. powder/soda, into mixing bowl add cocoa, sugar, oil, eggs, salt & chocolate. Whisk to combine. Grate cooked beet into batter. Sprinkle w/ dried fruit fold together & spoon into mini prepared pans & bake. 350 degrees for 20-25 min.
