Olive Loaf

My husband loves this bread. Green olives bake best, but sometimes I just love the Nicoise olives. Hmmmm maybe both?

Ingredients
- 2 1/2 cups water
- 1 Tb oil
- 5 cups AP flour
- 1 cup white wheat flour
- 1 1/2 tsp salt
- 1 Tb sugar
- 1 cup chopped olives
- 2 tsp herbed de Provence
- 2 cups walnuts or hazelnuts chopped
- Zest of lemon (maybe a lime?)
- 3 tsp yeast

Preparation
Step 1
Put in order listed into bread machine on dough cycle. When done turn out & fold several times. Divide & shape into loaves. Cover & let rise for 45-60 min. Covered. Brush w/ cornstarch wash & sprinkle w/ seeds. Bake in steamed oven at 425 degrees for 20-25 min.
