Ingredients

  • 1 envelope onion soup mix, divided
  • 2 pound roast or brisket
  • 2 T light brown sugar
  • 1 T lemon zest
  • 1 tsp ground cinnamon
  • 1 tsp pepper
  • 3/4 tsp ground ginger
  • 1 1/2 cups apple juice
  • 1/4 cup honey
  • 2 T orange marmalade
  • 1 tsp Worcestershire sauce
  • 1/3 cup dried apricots, chopped

Step 1

Preheat oven to 350 degrees. Line a large roasting pan with foil. Sprinkle half the soup mix over the bottom of the roasting pan (or cock pot). Add the brisket. Rub the remaining soup mix into the brisket. Bring the edges of the foil over the brisket and seal tightly. Bake for 3 hours. Combine the brown sugar, lemon zest, cinnamon, pepper and ginger in a medium mixing bowl and mix well. Stir in the apple juice, honey, orange marmalade and Worcestershire sauce. Add the apricots. Open the foil carefully. Pour the fruit mixture over the brisket and reseal. Bake for 1 hour longer or until the brisket is tender. (Crock pot version, add all ingredients and slow cook all day. Comes out tender and delicious!)
