Ingredients

  • 1 cup skim milk
  • 1 (8oz) container light cool whip
  • 1 (1 oz) box sugar free instant white chocolate pudding mix
  • 1/2 tsp peppermint extract (1 tsp for stronger peppermint taste)
  • 1 drop red (or pink) food coloring
  • 1 Oreo ready-made pie crust (OR 2 cups chocolate cookies, finely crushed mixed with 1/4 cup light butter, & pressed into pie pan~ for home-made crust!)
  • Optional Toppings: 2 candy canes crushed, 2 tbs white chocolate chips, whipped cream

Preparation

Step 1

Whisk first 5 ingredients together in a medium bowl, until everything is well combined.
Pour mixture into chocolate pie crust.
Sprinkle crushed candy canes and white chocolate chips over the top to garnish if desired.
Refrigerate for a few hours, or overnight until chilled and set. Squirt whipped cream around the rim just before serving, (if desired) and enjoy!
